Oh So good Breakfast Egg Salad

About the Recipe

Ingredients

  • 2 hard boiled eggs, peeled and chopped

  • 1 tsp Mustard (your choice, we like Dijon)

  • 1 tbsp Soy-Free Vegenaise

  • Hot Sauce to taste, omit if you are not a fan

  • 1/4 tsp dried dill

  • 2 small dill pickles, chopped (We use Milwaukee Dill's)

  • 1/4 tsp hemp hearts

  • 1/2 tsp sunflower seeds

Preparation

Combine all ingredients in a bowl until well mixed. Serve with your favorite slice of toasted bread topped with butter or ghee, garlic powder and itallian seasoning.


We like to keep hard boiled eggs in the refrigerator so as to not have to cook them each time.


Too cook hard boiled eggs:

  1. Allow eggs to sit out until they reach room temperature.

  2. bring a pot of water (enough to cover all the eggs) to a boil.

  3. Once boiling, add eggs into the water gently. Allow to boil for 12 minutes.

  4. Remove from hot water and submerge in cold water for about 1 to 2 minutes.

  5. Place back in carton and back in refrigerator for later use.
